That’s quite a list!

For the retrofitting of a wind instrument, unless you had the foresight to get your BRe with wiring running up the inside of the mast, I’d suggest that you go for a wireless version.  Several companies now offer them - Nasa, Garmin and Raymarine (Tacktick) to name but three.  I’ve had a Tacktick wind system since about 2012 and have been very pleased with it.

Speed and charts you can now get from a smartphone or tablet running an app like Navionics.  Just make sure that you waterproof it!

If you want depth, it’s probably easiest if you stick with the same brand as your wind instrument.

Icom do good handheld VHF radios.

If you have plenty of time (and patience) and want to know how things might look in the future, have a look at this thread https://www.swallowyachtsassociation.org/smf/index.php/topic,2005.0.html.
